Cauliflower Rice (Easy Recipes)

Cauliflower is the flower of veggies, or perhaps it can be called a healthier rice (it’s made of a vegetable after all 😉 ). Compared to boiling rice, which takes around 20 minutes, making cauliflower rice actually takes less time. I usually don’t eat much rice, unless it’s jasmine or basmati rice, so cauliflower rice seems like a nice variation. By the way, this recipe is vegan and gluten-free.

Ingredients are few. You just need a cauliflower. A good food processor is also useful but not essential.

So, how do you make this? Let’s start, shall we?

What Do You Need?

  • One large head cauliflower rice
  • 1 tablespoon of olive oil
  • Seasoning as desired (soy sauce, or salt and pepper, curry, etc)

How Do You Make It?

  • First wash the cauliflower
  • Remove all greens and dry cauliflower
  • For this step you can use either a box grater or a food processor. If you use a box grater, then cut the cauliflower into large chunks and start grating. This may get a little messy, but it works well. If you prefer a food processor, chop the cauliflower into smaller pieces and grind them in the food processor. Both methods will yield tiny rice pieces.

It looks a little bit like grated cheese, don’t you think? 😉
  • Transfer the small rice chunks to a paper towel to drain any excess moisture.
  • Now, heat a tablespoon of olive oil in a skillet and sauté the cauliflower rice. Season al gusto. I like to use soy sauce for that, but it can be anything you prefer; salt and pepper, curry, tamarind sauce, etc.
  • Cover with a lid to make the rice steam more, and cook for 5-8 minutes.
  • Serve immediately, or store in refrigerator for later on 😉

I made three variations, as you can see in the below picture.

On the left: cauliflower rice cooked with garlic and onion powder / Middle bowl: with curry and black pepper (black pepper enhances curcuma, a healthy ingredient of curry) / Right bowl: with soy sauce (I love rice and soy sauce!)

This is a nice side dish or it can also be used for a full meal as part of a curry or stir fry. I hope you like this recipe. There are many things you can do with cauliflower, and I will be happy to share more cauliflower recipes in upcoming posts. If you’d like to try this cauliflower rice, please let me know in the comments how it goes. 🙂

  1. Cauliflower rice is an excellent alternative to rice if you’re following a low-carb or ketogenic diet. It can be used to replace rice in a lot of dishes. There are also recipes for replacing potatoes with cauliflower as a substitute for mashed potatoes. It’s a good way to get more green vegetables, even if you’re not following any kind of a special diet.

    • Exactly, it’s an excellent alternative. Mashed cauliflower instead of mashed potatoes sounds great and is probably delicious too 🙂

    • Hi Gihan,

With one cauliflower you make a big plate of rice, so I would say that you will need 4 cauliflowers for 4 plates of rice. It tastes really good with onion and garlic powder. Thank you for your visit! I’m happy you’re enjoying my website 🙂

  4. I love your cauliflower rice recipe not just because it’s vegan and gluten-free but it also takes very little time to prepare this meal. I am elated that it takes less than 20 minutes that I normally need to boil my rice. The list of ingredients appears to be short also: cauliflower, olive oil and seasoning.

I will definitely try it out as a side dish and update you here shortly. Thanks.

  6. Wow, that’s fascinating, didn’t know you could even make cauliflower to look like rice – looks really appetizing. Wished my mum was still around, she’d have loved this – she had a thing for trying out new recipes, moreso if it involves fresh and natural ingredients.

In this day and age of dietary enlightenment everyone needs a dose of healthy living, thumbs up and keep them coming Christine.

  8. Hello Christine,
My mouth is watering. I have eaten cauliflower rarely. Its high price is limiting but how many properties it contains.

Contiene minerales como el potasio, calcio y en menor proporción el magnesio. Fibras, vitamina C y acido fólico.

The recipe shown is very simple, I will write it down in a notebook. Tomorrow I will get to work I will prepare it with soy sauce.

    Thank you!

  11. Hello Christine,

I have to say riced cauliflower is amazing!

I’m on a low-carb diet and two of the things that’s hard to do without are potatoes and rice.  Riced cauliflower can really come to the rescue here.

With a little help, riced cauliflower can be just like rice in texture and, well, the flavoring with rice is pretty-much all about what you add to it, right?  The same can be said for mashed potatoes.  Riced cauliflower, with a little butter, cream, and garlic, can make an excellent mashed potatoes substitute.

I can tell you that buying the pre-packaged flavored stuff is absolutely terrible.  At least, that’s been my experience.  I tried to cut corners and paid for it.  I actually had to throw it out.

Thanks again for sharing this.  I hope others give it a try and find that they can eat quite a bit healthier without losing texture and flavor.

    • Hi Scott,

I also don’t like the pre-packaged flavored stuff much either. I hadn’t even thought of it, but riced cauliflower with the right additions can indeed turn into a tasty mashed potato substitute. I should try that out 🙂

My opinion about this topic is everyone has to eat to survive and some may want to be vegan and vegetarians but simply cannot afford it and its not easy. This website is great to learn recipes from as looking more into your website it’s not just about the salad, there are more and more recipes for vegan and vegetarians every day and your website helps more than people just looking for recipes and tips, its saves the animals! Good for you!
